Always fascinated by an old honey extractor in the warehouse, in 2014 I decided to resume the activity that my father and some friends had undertaken as a hobby in the 1980s. My small company is home to 20 families of Apis Ligustica, the Italian breed par excellence, and is located in Vallerano, among the centuries-old chestnut groves of Monte Cimino. The bees produce chestnut, lime and millefiori honey. I loved the complexity of bees right from the start, making Petronius's words in the Satyricon my own: 'As for bees, I consider them divine beasts: they vomit honey that is said to have been received as a gift from Jupiter. On the other hand they sting, because where there is sweet you will also find bitter'. Since 2014, many steps I have taken together with the bees, and much I have grown thanks to them. If I look at a field today, I think about how many and which flowers will bloom there. If I see a bee, I try to understand in which direction the hive is located. Understanding that behind a jar of honey is a complex world, a self-sufficient superorganism, challenged today by intensive cultivation and climate change, is the greatest gift bees have given me.
